How to prepare salmon on your own

If you want to prepare the salmon yourself, do the following:

Remove the scales of the salmon, we recommend to do this with the salmon under a piece of paper, so that the scales do not fly around so far. Then cut the head from the body and fillet the salmon

Remove the belly skin and bones of the fillet, as well as all fins. Take a pair of tweezers and pull out the fish bones that point to the flanks of the fish. Brush your finger again and again over the fillet to find remaining fish bones. Cut the fillet diagonally in about two inches large pieces.

Preparation


1. Cut the salmon into bite-sized pieces and sprinkle it with salt & pepper. Let the salt soak into the salmon for about 10 minutes.

2. Cut the leek into thin strips and the red chilli and the lemon into thin slices.

3. Pourthe sushi-vinegar into a bowl and add the leek, the lemon and the chilli.

4. Carefully wipe the salmon dry with a towel and coat it on both sides with some flour.

5. Heat the oil in a large enoug pan or a pot (it must really be hot - approximately 175 degrees - to deep fry).
Let the flour coated pieces of salmon slip into the Oil and deep fry them until they are gold-brown.

6. Place the bowl with the marinade right next to the stove, because when the pieces of salmon are golden brown, take them out of the oil and immediately put then into the marinade.

7. Now the salmon has to stay in the marinade over night, or for at least 3 hours.

8. Serve the salmon on a plate on a bed of lettuce. Garnish with some of the leek, the lemon slices and red chilli
