Onigiri with Parikko

Crisp and fresh. Parikko (pickled cucumbers) is a typical side dish in Japan, which is a favorite snack with beer or as a sidedish. It has a fresh, slightly piquant taste and as an ingredient for onigiri it tastes especially good when the onigiri are still lukewarm.

Preparation

Mix the cooked, slightly cooled rice in a bowl with the Parikko and then form the onigiri.
