For the preparation of tuna paste for gunkan-maki chop up the cooked tuna.
Mix the tuna with the salt and the mayonnaise (Figure 1-3)
Let the tuna paste rest for approx. 10 minutes, so that it thickens slightly.
You can use the prepared tuna paste for maki-sushi or gunkan-maki.
You can cook this paste from left overs (i.e. of maki-sushi).
