As the spinach contains more fluid after cooking, make sure you prepare a somewhat thicker sauce.

Preparation:


Step 1:

Start with roasting the sesame seeds in a pan (without oil or something similar) until it is golden-brown.

Step 2:

Now grind the still warm sesame in a mortar until almost all the sesame seeds are broken up.

Step 3:
Gomaae

Cook the dashi broth, the mirin and the rice wine shortly in the Pan and poor everything, together with other ingredients, the soy sauce, the sugar and the miso, to the sesame. Keep on grinding until a shiny paste is formed.

Do you want to have it slightly easier?

Then we highly recommend you simply to take an already prepared sauce. It is available in our store and in our online shop


Step 4:

Cook the asparagus, until it is done (we recomend dente) dry it briefly on a kitchen towel.

Step 5:
Gomaae

Drop the asparagus into the mortar and stir gently, until the asparagus is covered with sauce from all sides.

Serve the Asparagus Gomaae in a small bowl.
