In this part of our Cookbook, you will find Chinese dishes. The Chinese cuisine is an expression of their culture just like the Japanese cuisine.
Because China is a very big country, the Chinese cuisine is divided into different regions. There are the regional cuisines of Sichuan, Canton, Hunan, Shandong, Jiangsu, Anhui, Fujian and Zhejiang. Due to the climate more wheat products are eaten in the north and more rice is eaten in the south, the regional climate strongly characterizes the Chinese cuisine.
Ingredients and preparations are taken over by other cultures or passed from culture to culture. For Europeans there are strange ingredients such as snakes, insects, or even authentic bird`s-nests to be found in the Chinese cuisine, especially in the Cantonese cuisine.
