The Japanese utility knife, which is known in Japan as SANTOKU, meaning usable for all purposes, is the most popular Japanese kitchen knive. And also in the United States this knife type is extremely popular, not least because of a TV cooking series.
Literally SANTOKU translated as three advantages because the santoku is able to fulfill the three main functions of a knife: Slice, dice and chop, for what reason the cook is benefited three times when using it. The Santoku chefs knife is thus the middle between a chopping/draw-knife and a fish fillet knife.
Because of its universal property, the santoku is especially recommended for Japanese knife beginners.
